Sourcing Stainless Steel Kitchenware from China: Grades, Thickness and the Marks That Lie
Stainless steel kitchenware is deceptively simple. It is a pot, a pan, a set of utensils. There is no battery, no firmware, nothing to fail. And yet this is one of the categories where I have seen the largest gap between what was quoted and what arrived, because the cost is hidden in the steel grade and the wall thickness, and both are invisible in a photo.
The single most common substitution in this category is 201 stainless steel sold as 304. Both look identical when polished. Both are non-magnetic enough to fool a fridge magnet. The difference shows up in two places: price, where 201 runs roughly 30 to 40 percent cheaper, and corrosion, where 201 will pit and rust in a dishwasher or with acidic food within months.
Grade is the whole ballgame
304 is the workhorse food-grade stainless. It resists corrosion, handles acidic foods, and survives dishwashers. 316 is the marine grade, higher nickel and molybdenum, more expensive, and genuinely necessary for anything that sees salt or harsh cleaning. 201 and 202 are lower-nickel grades that are technically stainless and technically a bad idea for cookware, though you will find them everywhere in cheap utensils and low-end pots.
Ask for a Material Test Certificate, an MTC, that states the grade and the heat number. Then verify. The cheap field test is a small bottle of stainless steel test solution, which runs about $10 and changes color based on the nickel and molybdenum content. It is not lab-accurate but it will catch 201 sold as 304 reliably. For anything expensive, send a sample to a lab for a proper composition analysis, usually under $100.
Thickness, and why the numbers do not add up
A pot quoted at 0.8mm walls often arrives at 0.5mm. On paper that is a 37 percent reduction. In the hand it is a pot that dents, feels flimsy in reviews, and heats unevenly. Always specify the gauge in millimeters and specify the tolerance, because "0.8mm" in many factory quotes means "0.8mm before finishing" and the finishing removes metal.
For utensils, thickness matters differently. A stamped spoon at 0.6mm feels like a piece of foil; at 1.0mm it feels like a tool. For a chef's knife, the relevant number is the spine thickness, commonly 2mm to 3mm, and the blade hardness, measured in HRC. Most decent kitchen knives land around 54 to 58 HRC. Below 52 they roll, above 60 they chip. Ask for the HRC and the steel type, because "stainless steel" on a knife spec is meaningless.
Handles, rivets and the joints that fail
The metal is rarely what fails. The handle is. Welded handles on pots and pans let go after a few hundred dishwasher cycles, and riveted handles fail when the rivets are undersized. Ask whether the handle is welded, riveted, or a single-piece construction, and ask for a pull test figure. A good pan should hold well over 50 kilograms of static load on the handle. Insist on a spot-check for this.
For utensils, look at the joint between the working end and the handle. One-piece stamped utensils are the most durable. Two-piece riveted ones are fine if the rivets are stainless and not plated. Glued or press-fit joints will fail, and they are the reason a customer returns a $15 utensil set.
Finishing and food safety
Mirror polish hides scratches and thin walls. If you are flexible on finish, a satin or brushed finish is more forgiving and shows less wear. Check that any non-stick coating is free of PFOA and PFAS, which is now a regulatory requirement in much of Europe and a growing concern in the US. Ask for the coating's food-contact certificate, not just the base metal certificate.
How to spec the order so it survives an audit
- Write the grade into the PO: 304 or 316, with a specified nickel and chromium range.
- Specify wall thickness in millimeters with an explicit minimum tolerance, not a nominal figure.
- Require an MTC per batch, with the heat number traceable to the shipment.
- Budget for a steel test solution check at incoming inspection, plus a lab test on high-value orders.
- Specify handle construction and require a pull-test value for anything with a load-bearing handle.
- Confirm PFOA and PFAS-free coating certificates for all non-stick items.
Stainless kitchenware is a category you can build a private label on, but only if you treat the spec sheet as a contract instead of a suggestion. The factory will always drift toward the cheaper steel if you let them, and the customer will always notice, just not until after they have already given you a one-star review.
